Dirk F as already mentioned by others in comments, welcome emails are associated with a list. So a single subscriber can receive multiple welcome emails when they subscribe to different lists.
That said, with Automations, you can now send welcome emails every time someone also re-subscribes to the same list. See the "Run this automation only once per subscriber." option, which controls it.

Ján Mikláš: This is only for welcome emails. not for the registration confirmation emails, right? I've set these emails to lead to a custom landing page that says "thanks for signing up to this particular newsletter". How can I let users be directed to a different landing page if they opt in to a second list for another newsletter?

Greater flexibility in this area would certainly be helpful. I've given it an upvote!
If you have a moment, would you be so kind to review one that I have put up about a campaign tab? If you like it, I'd appreciate an upvote. Cheers!

Wait, if I have different welcome e-mails scheduled for different lists subscribers of both lists only get one of them?

Undine de Rivière: Currently / unfortunately yes. Would be great if to get a new functionality here, wouldn’t it?
Undine de Rivière
Dirk F: Absolutely.

Undine de Rivière: I cannot confirm this behavior. I have two forms, each connected to one list. And I have two welcome mails, one for each list. If the user subscribes to the first list, he becomes the welcome mail for the first list. If he subscribes for the second list, he gets the welcome mail for the second list as well.

Sofia: agree. This happens for me too. They do get the second welcome series too. I actually wish I could set it the other way. Maybe a toggle to choose which way for each list would be useful.
