Currently I understand that name and email address are held in plain text in the Wordpress database. While I know you say that technically this complies with GDPR, it is not best practice in case of a breach. For me, I'd expect that any software storing personally identifiable data in a database should provide the option of encrypting it. There is no need for me to encrypt my entire Wordpress database - only the parts with PII, which is why I think this functionality best sits with the Mailpoet plugin. Thanks.
